Instructions
Preheat your oven to 400°F (200°C).
Wash the zucchinis and slice them in half lengthwise. Scoop out the seeds and some flesh to create hollow spaces.
Place the zucchinis cut-side up on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt and pepper.
Spread 2-3 tablespoons of marinara or pizza sauce into each zucchini half.
Layer your chosen vegetables and protein over the sauce, then sprinkle shredded mozzarella cheese on top.
