Ingredients

Zucchini

  • 2 large Zucchini Sliced in half lengthwise

Sauce

  • 1 cup Marinara or Pizza Sauce Choose your favorite sauce

Cheese

  • 1.5 cups Shredded Mozzarella Cheese Use part-skim or full-fat

Vegetables

  • 1 cup Chopped Vegetables Such as bell peppers, onions, or mushrooms

Protein

  • 1 cup Cooked Ground Turkey or Chicken Sausage Crumble before adding

Spices

  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt
  • to taste Pepper

Oil

  • 1 tablespoon Olive Oil For drizzling

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash the zucchinis and slice them in half lengthwise. Scoop out the seeds and some flesh to create hollow spaces.
  • Place the zucchinis cut-side up on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt and pepper.
  • Spread 2-3 tablespoons of marinara or pizza sauce into each zucchini half.
  • Layer your chosen vegetables and protein over the sauce, then sprinkle shredded mozzarella cheese on top.
  • Bake in the preheated oven for 20-25 minutes until the zucchinis are tender and the cheese is bubbly and golden brown.
  • Let cool for a few minutes before serving. Garnish with fresh basil or crushed red pepper flakes if desired.

Notes

Feel free to customize toppings based on your preferences. You can also prepare the zucchinis ahead of time and add toppings before baking.
