Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the chicken thighs with the zaatar spice blend, olive oil, salt, and pepper. Marinate for 15-30 minutes.
Prepare the vegetables by tossing the sliced bell peppers, red onion, and carrots with olive oil, salt, and pepper.
Arrange the marinated chicken thighs in the center of a baking sheet and surround with the seasoned vegetables.
Roast in the preheated oven for 30-35 minutes until chicken is golden brown and cooked through.
While roasting, prepare the tahini sauce by whisking together tahini, minced garlic, lemon juice, and water until creamy.
Let the chicken and vegetables rest for a few minutes after roasting.
Serve the roasted chicken and vegetables on a platter, drizzled with tahini sauce.
