Instructions

  • 1. Start by pressing the tofu. Wrap the block of tofu in a clean kitchen towel or paper towel and place a heavy object on top. Let it sit for about 15-20 minutes to remove excess moisture.
  • 2. Crumble the pressed tofu into bite-sized pieces.
  • 3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  • 4. Add the minced garlic and cook for another minute.
  • 5. Add the diced bell pepper and cook for an additional 3-4 minutes.
  • 6. Stir in the crumbled tofu and cook for about 5 minutes.
  • 7. Sprinkle in the turmeric, cumin, and nutritional yeast, stirring to coat the tofu.
  • 8. Add the chopped spinach or kale and cook until wilted.
  • 9. Season with salt and pepper, and add red pepper flakes if desired.
  • 10. Serve hot, garnished with fresh herbs if desired.
