Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
Cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 2-3 minutes.
Add the egg yolk and vanilla extract, mixing until well combined.
In a separate bowl, whisk together the flour and salt. Gradually add this to the wet ingredients, mixing on low speed until just combined.
Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheets.
Press down in the center of each ball to create an indentation, then fill with jam or jelly.
Bake for 12-15 minutes or until the edges are lightly golden. Allow to cool on baking sheets for 5 minutes before transferring to wire racks.
