Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 2-3 minutes.
  • Add the egg yolk and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour and salt. Gradually add this to the wet ingredients, mixing on low speed until just combined.
  • Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheets.
  • Press down in the center of each ball to create an indentation, then fill with jam or jelly.
  • Bake for 12-15 minutes or until the edges are lightly golden. Allow to cool on baking sheets for 5 minutes before transferring to wire racks.
  • Enjoy your cookies or store them in an airtight container.
