Ingredients

Pasta

  • 12 ounces Pasta Any variety such as penne, fusilli, or elbow macaroni.

Meat

  • 1 pound Ground beef or turkey Choose lean meat for a balanced dish.

Vegetables

  • 1 tablespoon Olive oil For sautéing the meat and vegetables.
  • 1 medium Onion, diced Provides a base of flavor and sweetness.
  • 2 cloves Garlic, minced Elevates the dish with aromatic qualities.
  • 1 medium Bell pepper, diced Any color will do, but red or yellow adds sweetness.
  • 1 packet Taco seasoning About 1 ounce, includes spices like chili powder.

Canned Goods

  • 1 can Diced tomatoes 14.5 ounces, provides juiciness and acidity.
  • 1 cup Beef or vegetable broth Essential for cooking the pasta.
  • 1 cup Shredded cheese Cheddar or a Mexican blend works well.
  • 1 cup Corn Frozen or canned, adds sweetness and texture.

Seasoning

  • Salt and pepper To taste.

Garnish

  • 1 cup Fresh cilantro, chopped Optional, for garnish.
  • Sliced jalapeños Optional, for added heat.

Instructions

  • 1. Start by cooking the pasta. Bring a large pot of salted water to a boil and add your chosen pasta. Cook according to the package instructions until al dente. Drain and set aside.
  • 2. In the same pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent.
  • 3. Add the minced garlic and diced bell pepper to the pot, stirring for another 2-3 minutes.
  • 4. Increase the heat slightly and add the ground beef or turkey to the pot. Cook until browned and no longer pink, about 5-7 minutes.
  • 5. Sprinkle the taco seasoning over the meat mixture, stirring well to coat.
  • 6. Pour in the diced tomatoes along with their juices and the broth. Stir everything together and bring to a gentle simmer.
  • 7. Add the corn to the pot, stirring to incorporate. Allow to simmer for about 5 minutes.
  • 8. Once the sauce is heated through, add the cooked pasta to the pot. Gently fold the pasta into the sauce.
  • 9. Sprinkle the shredded cheese over the top, stirring gently until it melts and blends into the pasta.
  • 10. Taste and adjust seasoning with salt and pepper if needed. Add sliced jalapeños if desired.
  • 11. Serve hot, garnished with fresh cilantro and any additional toppings you desire.

Notes

For a creamier version, stir in a dollop of sour cream or cream cheese just before serving.
