Instructions

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, combine the softened cream cheese, sour cream, shredded mozzarella, grated Parmesan, chopped spinach, chopped artichoke hearts, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are fully incorporated and creamy.
  • Season the chicken breasts with salt and pepper on both sides.
  • In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  • Remove the skillet from heat. Spoon the spinach artichoke mixture over the top of each chicken breast, spreading it evenly.
  • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Once baked, remove the skillet from the oven and let the chicken rest for about 5 minutes.
  • Garnish with fresh herbs like parsley or basil, if desired.

Notes

For added crunch, sprinkle some breadcrumbs on top of the cheese mixture before baking.
