Instructions

  • 1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  • 2. Add the minced garlic and sauté for an additional minute.
  • 3. Stir in the diced tomato and cook for another 2-3 minutes.
  • 4. Pour in the crushed tomatoes and let cook for about 5 minutes.
  • 5. Add the broth, cumin, chili powder, salt, and black pepper. Bring to a gentle simmer.
  • 6. Add the fideo noodles and cook for 6-8 minutes until tender.
  • 7. Remove from heat, taste, and adjust seasoning if necessary.
  • 8. Serve in bowls garnished with cilantro, avocado, and lime wedges.
