Instructions

  • Step 1: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  • Step 2: Heat olive oil in a large skillet over medium-high heat until shimmering.
  • Step 3: Sear the chicken breasts for 5-6 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Transfer to a plate and cover loosely with foil.
  • Step 4: In the same skillet, reduce heat to medium and add halved cherry tomatoes. Sauté for 2-3 minutes until softened. Add mayonnaise, Dijon mustard, garlic powder, and smoked paprika, stirring until well combined and heated through.
  • Step 5: Gently fold in chopped romaine lettuce, allowing it to wilt slightly in the warm sauce.
  • Step 6: Return the seared chicken to the skillet, spooning the creamy sauce over the top. Sprinkle shredded cheddar cheese evenly across the chicken and cover with a lid. Cook for an additional 2-3 minutes until cheese is melted and bubbly.
  • Step 7: Remove from heat and garnish with freshly chopped parsley. Serve warm.
