  • 200 grams Smoky Chorizo Diced into bite-sized pieces.
  • 800 grams Canned Tomatoes Two cans of diced tomatoes.
  • 400 grams White Beans Canned, rinsed, and drained.
  • 1 medium Onion Finely chopped.
  • 3 cloves Garlic Minced.
  • 500 ml Vegetable Broth
  • 2 tablespoons Olive Oil For sautéing.
  • 1 teaspoon Smoked Paprika
  • to taste Salt
  • to taste Pepper
  • handful Fresh Parsley Optional, for garnish.

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Introduce the diced chorizo and cook for 5-7 minutes until browned and fat is rendered.
  • Add the canned tomatoes with their juices, stirring to combine.
  • Incorporate the rinsed white beans, folding them into the mixture.
  • Pour in the vegetable broth and stir to combine.
  • Season with smoked paprika, salt, and pepper. Stir well and adjust seasoning to taste.
  • Bring to a gentle simmer, reduce heat to low, cover, and cook for 20-25 minutes.
  • Check occasionally, stirring to prevent sticking. Add more broth if too thick.
  • Remove from heat and stir in chopped parsley if desired. Serve warm.

Notes

This dish can be served with crusty bread or over rice for a complete meal. Leftovers can be stored in the refrigerator for up to three days.
