Instructions
Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Introduce the diced chorizo and cook for 5-7 minutes until browned and fat is rendered.
Add the canned tomatoes with their juices, stirring to combine.
Incorporate the rinsed white beans, folding them into the mixture.
Pour in the vegetable broth and stir to combine.
Season with smoked paprika, salt, and pepper. Stir well and adjust seasoning to taste.
Bring to a gentle simmer, reduce heat to low, cover, and cook for 20-25 minutes.
Check occasionally, stirring to prevent sticking. Add more broth if too thick.
Remove from heat and stir in chopped parsley if desired. Serve warm.
Notes
This dish can be served with crusty bread or over rice for a complete meal. Leftovers can be stored in the refrigerator for up to three days.
