Instructions
Preheat your oven to 425°F (220°C).
Prepare the cauliflower by removing leaves and trimming the stem. Rinse and pat dry.
In a mixing bowl, combine olive oil, ground cumin, salt, and black pepper. Whisk until well combined.
Coat the cauliflower evenly with the oil and spice mixture.
Transfer the coated cauliflower to a baking sheet lined with parchment paper, stem side down.
Roast for 40-50 minutes, flipping halfway through for even browning.
Check for doneness by inserting a knife into the center; it should slide in easily.
Remove from oven and drizzle with fresh lemon juice.
Let rest for a few minutes before slicing into wedges or florets.
Garnish with chopped cilantro if desired and serve warm.
