  • 3 tablespoons Olive Oil Extra virgin olive oil for a crispy exterior.
  • 2 teaspoons Ground Cumin For warm, earthy flavor.
  • 1 teaspoon Kosher Salt Adjust based on preference.
  • 1/2 teaspoon Black Pepper Freshly ground for subtle kick.
  • 1/2 lemon Lemon Juice About 1-2 tablespoons for brightness.
  • 1 handful Fresh Cilantro Optional, for garnish.

Instructions

  • Preheat your oven to 425°F (220°C).
  • Prepare the cauliflower by removing leaves and trimming the stem. Rinse and pat dry.
  • In a mixing bowl, combine olive oil, ground cumin, salt, and black pepper. Whisk until well combined.
  • Coat the cauliflower evenly with the oil and spice mixture.
  • Transfer the coated cauliflower to a baking sheet lined with parchment paper, stem side down.
  • Roast for 40-50 minutes, flipping halfway through for even browning.
  • Check for doneness by inserting a knife into the center; it should slide in easily.
  • Remove from oven and drizzle with fresh lemon juice.
  • Let rest for a few minutes before slicing into wedges or florets.
  • Garnish with chopped cilantro if desired and serve warm.
