  • 4 fillets Salmon Fillets Each fillet should weigh around 6 ounces.
  • 1 cup Cherry Tomatoes Halved.
  • 1/3 cup Black Olives Pitted.
  • 1 cup Fresh Basil Chopped.
  • 3 cloves Garlic Minced.
  • 2 tablespoons Olive Oil Extra virgin.
  • 2 tablespoons Lemon Juice Freshly squeezed.

Instructions

  • Gather all your ingredients and prepare your workspace.
  • Preheat your oven to 400°F (200°C).
  • In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  • Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften.
  • Incorporate the black olives into the mixture and cook for an additional 2 minutes.
  • Season the salmon fillets with salt and pepper on both sides.
  • Push the tomato and olive mixture to the sides of the skillet and place the salmon fillets skin-side down into the skillet.
  • Cook the salmon for about 3-4 minutes without moving it.
  • Drizzle the lemon juice over the fillets.
  • Transfer the skillet to the preheated oven and bake for 10-12 minutes.
  • Remove the skillet from the oven and sprinkle the chopped fresh basil over the top.
  • Let the dish rest for a few minutes before serving.
