  • 2 medium Aubergine Cut into 1-inch thick slices.
  • 1 cup Teriyaki Sauce Look for a sauce free from artificial additives.
  • 4 cloves Garlic Minced.
  • 1 inch Fresh Ginger Grated and peeled.
  • 2 tablespoons Sesame Oil For flavor enhancement.
  • 3 stalks Spring Onions Finely chopped for garnish.
  • 2 tablespoons Sesame Seeds Toasted, for garnish.

  • to taste Black Pepper Freshly ground.

Instructions

  • Preheat your oven to 200°C (400°F).
  • Wash the aubergines, pat dry, and slice into 1-inch thick rounds.
  • In a mixing bowl, drizzle aubergine slices with 1 tablespoon of sesame oil and season with salt and pepper. Toss to coat.
  • Spread the seasoned aubergine on a baking sheet lined with parchment paper in a single layer.
  • Roast the aubergine for 25-30 minutes, flipping halfway through.
  • In a saucepan, combine teriyaki sauce, minced garlic, and grated ginger. Heat over medium for 5-7 minutes.
  • Once aubergine is roasted, transfer to a serving bowl and pour the warm teriyaki sauce over it.
  • Gently toss to coat the aubergine in the sauce.
  • Garnish with spring onions and sesame seeds before serving.
  • Serve warm, ideally with rice or as part of a larger meal.

Notes

This dish can be served over rice, in salads, or as a side. Leftovers can be stored in the refrigerator for up to three days.
