Instructions

  • Preheat your oven to 350°F (175°C).
  • Peel and cube the sweet potatoes into even-sized pieces.
  • Place the cubed sweet potatoes in a large pot, cover with water, and bring to a boil.
  • Cook for 15-20 minutes until fork-tender, then drain.
  • Return sweet potatoes to the pot and add butter, brown sugar, milk, cinnamon, vanilla, and eggs. Mash until smooth.
  • Transfer the mixture to a greased 9x13-inch baking dish.
  • In a separate bowl, combine pecans, flour, and melted butter. Mix until crumbly.
  • Sprinkle the pecan mixture over the sweet potatoes.
  • Bake for 25-30 minutes until the top is golden brown.
  • Let cool for a few minutes before serving.
