  • 3-4 tablespoons Ice Water To bring dough together.
  • 1 egg Egg Wash (optional) Beaten with a tablespoon of water.

Instructions

  • In a large mixing bowl, combine flour, sugar, and salt. Whisk together.
  • Incorporate cold butter into the flour mixture until it resembles coarse crumbs.
  • Gradually add ice water, stirring gently until the dough comes together.
  • Form the dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  • Prepare the filling by mixing strawberries with elderflower syrup and sugar. Let sit for 15 minutes.
  • Preheat oven to 400°F (200°C).
  • Roll out the chilled dough into a 12-inch circle on a floured surface.
  • Transfer the rolled dough to a parchment-lined baking sheet.
  • Spoon the strawberry mixture onto the center of the dough, leaving a 2-inch border.
  • Fold the edges of the dough over the filling, creating pleats.
  • Brush the edges with egg wash if desired.
  • Bake for 30-35 minutes until the crust is golden and strawberries are bubbly.
  • Cool for 10 minutes before serving warm or at room temperature.
