Beaten with a tablespoon of water.
Instructions
In a large mixing bowl, combine flour, sugar, and salt. Whisk together.
Incorporate cold butter into the flour mixture until it resembles coarse crumbs.
Gradually add ice water, stirring gently until the dough comes together.
Form the dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
Prepare the filling by mixing strawberries with elderflower syrup and sugar. Let sit for 15 minutes.
Preheat oven to 400°F (200°C).
Roll out the chilled dough into a 12-inch circle on a floured surface.
Transfer the rolled dough to a parchment-lined baking sheet.
Spoon the strawberry mixture onto the center of the dough, leaving a 2-inch border.
Fold the edges of the dough over the filling, creating pleats.
Brush the edges with egg wash if desired.
Bake for 30-35 minutes until the crust is golden and strawberries are bubbly.
Cool for 10 minutes before serving warm or at room temperature.
