  • 1 cup Red Lentils Rinsed and cleaned.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 1 medium Carrot Diced.
  • 1 stalk Celery Diced.
  • 4 cups Vegetable Broth Quality broth enhances flavor.

Spices

  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Coriander Powder

Seasoning

  • to taste Pepper
  • 1 tablespoon Lemon Juice Freshly squeezed.

Garnish

  • to taste Fresh Parsley Chopped, for garnish.

Instructions

  • Rinse red lentils under cold water until the water runs clear.
  • In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
  • Add minced garlic and cook for 1-2 minutes, stirring frequently.
  • Incorporate diced carrot and diced celery, cooking for another 5 minutes.
  • Add rinsed red lentils and stir to combine with the vegetables.
  • Pour in vegetable broth and ensure all ingredients are submerged.
  • Sprinkle in cumin, turmeric, and coriander, stirring well.
  • Season with salt and pepper to taste, then bring to a gentle boil.
  • Reduce heat to low, cover, and let simmer for 20-25 minutes.
  • Once lentils are tender, stir in lemon juice.
  • Ladle soup into bowls and garnish with chopped parsley.

Notes

For a creamier texture, blend a portion of the soup. Add cayenne for heat or incorporate additional vegetables for a heartier soup.
