Instructions
Rinse red lentils under cold water until the water runs clear.
In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
Add minced garlic and cook for 1-2 minutes, stirring frequently.
Incorporate diced carrot and diced celery, cooking for another 5 minutes.
Add rinsed red lentils and stir to combine with the vegetables.
Pour in vegetable broth and ensure all ingredients are submerged.
Sprinkle in cumin, turmeric, and coriander, stirring well.
Season with salt and pepper to taste, then bring to a gentle boil.
Reduce heat to low, cover, and let simmer for 20-25 minutes.
Once lentils are tender, stir in lemon juice.
Ladle soup into bowls and garnish with chopped parsley.
Notes
For a creamier texture, blend a portion of the soup. Add cayenne for heat or incorporate additional vegetables for a heartier soup.
