Instructions
Preheat your oven to 450°F (230°C).
Place the turkey breast side down on a cutting board. Cut along each side of the backbone to remove it completely.
Flip the turkey over and press down firmly on the breastbone to flatten it.
Pat the turkey dry with paper towels.
In a bowl, combine olive oil, salt, black pepper, garlic powder, onion powder, and herbs to form a paste.
Rub the olive oil mixture all over the turkey, getting under the skin where possible.
Mix lemon zest and juice, then drizzle it over the turkey.
Prepare a roasting pan with chopped vegetables on the bottom.
Place the turkey on top of the vegetables in the roasting pan, breast side up.
Pour chicken broth into the bottom of the pan.
Roast the turkey for 60 to 75 minutes, until the internal temperature reaches 165°F (74°C).
Baste the turkey halfway through cooking with pan juices.
Let the turkey rest for at least 20 minutes before carving.
Carve the turkey and serve with your favorite sides.
