Ingredients

Turkey

  • 1 whole (12-14 pounds) Whole Turkey Fresh or thawed frozen, giblets removed and patted dry.

Oil and Seasonings

Vegetables

Instructions

  • Preheat your oven to 450°F (230°C).
  • Place the turkey breast side down on a cutting board. Cut along each side of the backbone to remove it completely.
  • Flip the turkey over and press down firmly on the breastbone to flatten it.
  • Pat the turkey dry with paper towels.
  • In a bowl, combine olive oil, salt, black pepper, garlic powder, onion powder, and herbs to form a paste.
  • Rub the olive oil mixture all over the turkey, getting under the skin where possible.
  • Mix lemon zest and juice, then drizzle it over the turkey.
  • Prepare a roasting pan with chopped vegetables on the bottom.
  • Place the turkey on top of the vegetables in the roasting pan, breast side up.
  • Pour chicken broth into the bottom of the pan.
  • Roast the turkey for 60 to 75 minutes, until the internal temperature reaches 165°F (74°C).
  • Baste the turkey halfway through cooking with pan juices.
  • Let the turkey rest for at least 20 minutes before carving.
  • Carve the turkey and serve with your favorite sides.
