Instructions
Start by preparing your shrimp. If using frozen shrimp, ensure they are fully thawed. Rinse them under cold water and pat them dry using a paper towel.
In a large mixing bowl, combine the shrimp with the juice of two limes, minced garlic, chili powder, salt, and pepper. Mix well and allow to marinate for 10-15 minutes.
While the shrimp is marinating, prepare your toppings: shred the cabbage, slice the avocado, and chop the cilantro.
Heat a large skillet over medium-high heat and add a drizzle of oil.
Add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes on one side until they turn pink and opaque.
Flip the shrimp and cook for an additional 2-3 minutes on the other side. Remove from skillet and set aside.
In the same skillet, warm the tortillas one at a time for about 30 seconds on each side until soft.
To assemble the tacos, place a few shrimp in each tortilla and top with cabbage, avocado, and cilantro. Drizzle with lime juice if desired.
Serve immediately while warm, with salsa or hot sauce on the side.
Notes
Leftover shrimp can be refrigerated for up to two days. Reheat gently before serving.
