  • 2 pounds Fresh Tomatoes Roma or vine-ripened tomatoes work best.
  • 1 medium Red Onion Finely chopped.
  • 1/4 cup Fresh Cilantro Chopped.
  • 1 unit Jalapeño Pepper Finely chopped, adjust based on heat preference.
  • 1 unit Lime Juice Freshly squeezed.
  • 1/2 teaspoon Salt Adjust to taste.
  • 1 tablespoon Olive Oil Optional but recommended for roasting.

Instructions

  • Preheat your oven to 400°F (200°C).
  • Prepare a baking sheet by lining it with parchment paper.
  • Wash the fresh tomatoes thoroughly and slice them in half lengthwise.
  • Place the halved tomatoes cut-side up on the prepared baking sheet.
  • Drizzle the tomatoes with olive oil and sprinkle with salt.
  • Roast the tomatoes for about 25-30 minutes until soft and slightly charred.
  • While the tomatoes are roasting, chop the red onion, jalapeño, and cilantro, and squeeze the lime juice.
  • Once the tomatoes are done, let them cool for a few minutes, then mash them to your desired consistency.
  • Add the chopped onion, jalapeño, cilantro, and lime juice to the mashed tomatoes and mix well.
  • Taste and adjust seasoning with more salt or lime juice if necessary.
  • Let the salsa sit for at least 15 minutes to allow flavors to meld.
  • Serve fresh with chips or as a topping for your favorite dishes.

Notes

Store leftovers in an airtight container in the refrigerator for 3-5 days.
