Roma or vine-ripened tomatoes work best.

Instructions
Preheat your oven to 400°F (200°C).
Prepare a baking sheet by lining it with parchment paper.
Wash the fresh tomatoes thoroughly and slice them in half lengthwise.
Place the halved tomatoes cut-side up on the prepared baking sheet.
Drizzle the tomatoes with olive oil and sprinkle with salt.
Roast the tomatoes for about 25-30 minutes until soft and slightly charred.
While the tomatoes are roasting, chop the red onion, jalapeño, and cilantro, and squeeze the lime juice.
Once the tomatoes are done, let them cool for a few minutes, then mash them to your desired consistency.
Add the chopped onion, jalapeño, cilantro, and lime juice to the mashed tomatoes and mix well.
Taste and adjust seasoning with more salt or lime juice if necessary.
Let the salsa sit for at least 15 minutes to allow flavors to meld.
Serve fresh with chips or as a topping for your favorite dishes.
Notes
Store leftovers in an airtight container in the refrigerator for 3-5 days.
