Instructions

  • Preheat your oven to 300°F (150°C).
  • Scoop out the seeds from a fresh pumpkin, about 1 cup.
  • Rinse the seeds under cold water in a fine-mesh strainer.
  • Spread the seeds on a clean towel to dry.
  • Transfer the dried seeds to a mixing bowl and drizzle with olive oil.
  • Add salt and any optional seasonings, mixing thoroughly.
  • Prepare a baking sheet lined with parchment paper.
  • Spread the seasoned seeds in a single layer on the baking sheet.
  • Roast for 20-25 minutes, stirring every 10 minutes.
  • Remove from oven and let cool completely.
