Instructions
Preheat your oven to 300°F (150°C).
Scoop out the seeds from a fresh pumpkin, about 1 cup.
Rinse the seeds under cold water in a fine-mesh strainer.
Spread the seeds on a clean towel to dry.
Transfer the dried seeds to a mixing bowl and drizzle with olive oil.
Add salt and any optional seasonings, mixing thoroughly.
Prepare a baking sheet lined with parchment paper.
Spread the seasoned seeds in a single layer on the baking sheet.
Roast for 20-25 minutes, stirring every 10 minutes.
Remove from oven and let cool completely.
