Instructions
Preheat your oven to 425°F (220°C).
Prepare the cauliflower by trimming the leaves and cutting it into even-sized florets.
In a large mixing bowl, combine the cauliflower florets with olive oil and toss to coat.
In a small skillet, heat a tablespoon of olive oil over medium heat. Add the cumin and mustard seeds and cook until they pop.
Remove from heat and stir in turmeric, salt, and black pepper.
Pour the spiced oil mixture over the cauliflower and toss well.
Spread the cauliflower on a baking sheet lined with parchment paper.
Roast for 25-30 minutes, flipping halfway through.
Once roasted, let it cool slightly and garnish with cilantro before serving.
