  • 1/2 teaspoon freshly ground black pepper Provides gentle heat.
  • 2 tablespoons lemon juice Tenderizes chicken and adds brightness.

Skewers

  • 1 set metal or wooden skewers Soak wooden skewers in water for 30 minutes before grilling.

Instructions

  • Begin by preparing your ingredients. Ensure that the chicken breast is cut into uniform, bite-sized cubes, approximately 1 to 1.5 inches in size.
  • In a mixing bowl, combine the minced garlic, ground cumin, ground coriander, smoked paprika, ground cinnamon, sea salt, and freshly ground black pepper.
  • Add the olive oil and lemon juice to the spice mixture. Whisk everything together until you have a cohesive marinade.
  • Place the cubed chicken into the bowl, ensuring that each piece is generously coated in the marinade. Cover the bowl and refrigerate for at least one hour, or ideally overnight.
  • Preheat your grill to medium-high heat, ensuring it is clean and well-oiled.
  • Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
  • Place the skewers on the grill, cooking for about 10-15 minutes. Turn them every few minutes to achieve even grilling.
  • Once cooked, remove the skewers from the grill and let them rest for a few minutes.
  • Serve the Simple Moroccan Chicken Skewers warm, garnished with fresh herbs like parsley or cilantro.

Notes

For a spicier kick, add cayenne pepper or harissa to the marinade. You can also experiment with different proteins or add seasonal vegetables to the skewers.
