Instructions
Rinse the red lentils under cold running water until the water runs clear. Drain and set aside.
In a medium-sized pot, add the rinsed lentils and three cups of water. Bring to a boil, then reduce heat and simmer for about 20 minutes until soft.
In a separate pan, heat oil or ghee over medium heat. Add cumin seeds and let them sizzle.
Add the chopped onion and cook until translucent and slightly golden.
Incorporate minced garlic, grated ginger, and slit green chili. Sauté for 2-3 minutes.
Add chopped tomato, turmeric powder, coriander powder, and salt. Cook until tomatoes soften.
Pour the tomato mixture into the cooked lentils and stir well. Simmer for another 5-10 minutes.
Garnish with chopped cilantro and serve hot with rice or naan.
Notes
For variations, consider adding coconut milk, vegetables, or adjusting spice levels to your preference.
