Marinade Ingredients

  • 1.5 pounds Flank Steak A lean cut perfect for marinating and grilling.
  • 1/4 cup Olive Oil Extra virgin for best flavor.

  • 1/4 cup Lemon Juice Freshly squeezed.
  • 1 teaspoon Cumin Ground for earthy flavor.

Muhammara Ingredients

  • 1/2 cup Pine Nuts Toasted for richness.
  • 1 cup Roasted Red Peppers Jarred or homemade.
  • 2 cloves Garlic Minced for muhammara.
  • 1 tablespoon Lemon Juice For brightness in muhammara.
  • 1 teaspoon Red Pepper Flakes Adjust for spice preference.
  • 1 handful Parsley Chopped for garnish.

Instructions

  • In a mixing bowl, combine olive oil, lemon juice, minced garlic, cumin, paprika, and salt. Whisk until well combined.
  • Place the flank steak in a resealable bag or dish, pour the marinade over it, seal, and refrigerate for at least 2 hours or overnight.
  • In a food processor, blend roasted red peppers, pine nuts, minced garlic, lemon juice, and red pepper flakes until smooth.
  • Adjust seasoning of muhammara if needed, transfer to a bowl, and refrigerate until serving.
  • Remove steak from the fridge, let it sit at room temperature for 30 minutes.
  • Preheat grill to medium-high heat. Grill steak for 5-7 minutes on each side for medium-rare.
  • Let the steak rest for 10 minutes, then slice against the grain.
  • Serve sliced steak with muhammara on the side.

Notes

Store leftovers in an airtight container for up to three days. The flavors of the muhammara may intensify over time.
