Instructions
Rinse the aubergine and slice it into even rounds, about 1/2 inch thick.
Place the sliced aubergine in a colander and sprinkle with salt. Let sit for 20 minutes.
In a mixing bowl, combine olive oil, balsamic vinegar, minced garlic, and pepper. Whisk together.
Rinse the salted aubergine slices and pat dry with a towel.
Place aubergine slices in a zip-top bag or dish, pour marinade over, and let marinate for at least 30 minutes.
Preheat grill or grill pan over medium-high heat.
Grill aubergine slices for 4-5 minutes on each side until tender.
Prepare bread by toasting if desired.
Assemble the sandwich with grilled aubergine and fresh herbs.
Top with another slice of bread, slice in half, and serve immediately.
Notes
Store leftovers in an airtight container for up to three days. Reheat gently before serving.
