  • 1 medium Aubergine Approximately 1 pound, sliced into rounds or strips.
  • 4 tablespoons Olive Oil Extra virgin for best flavor.
  • 2 tablespoons Balsamic Vinegar Adds acidity and sweetness.
  • 2 cloves Garlic Mince for marinade.
  • 1 teaspoon Salt Sea salt for flavor.
  • 1/2 teaspoon Black Pepper Freshly ground, to taste.
  • 1 handful Fresh Herbs Basil or parsley for garnish.
  • 4 slices Bread Ciabatta or sourdough recommended.

Instructions

  • Rinse the aubergine and slice it into even rounds, about 1/2 inch thick.
  • Place the sliced aubergine in a colander and sprinkle with salt. Let sit for 20 minutes.
  • In a mixing bowl, combine olive oil, balsamic vinegar, minced garlic, and pepper. Whisk together.
  • Rinse the salted aubergine slices and pat dry with a towel.
  • Place aubergine slices in a zip-top bag or dish, pour marinade over, and let marinate for at least 30 minutes.
  • Preheat grill or grill pan over medium-high heat.
  • Grill aubergine slices for 4-5 minutes on each side until tender.
  • Prepare bread by toasting if desired.
  • Assemble the sandwich with grilled aubergine and fresh herbs.
  • Top with another slice of bread, slice in half, and serve immediately.

Notes

Store leftovers in an airtight container for up to three days. Reheat gently before serving.
