Instructions
Preheat your oven to 400°F (200°C).
Wash the acorn squash under cold running water and pat dry.
Slice each acorn squash in half from stem to tip.
Scoop out the seeds and stringy insides using a spoon.
Place the squash halves cut-side up on a baking sheet lined with parchment paper.
Mix together olive oil, maple syrup, salt, pepper, and cinnamon in a small bowl.
Brush or drizzle the maple mixture over the cut sides of the acorn squash.
Flip the squash halves cut-side down on the baking sheet.
Roast the squash for about 25 to 30 minutes until tender.
Flip the squash back to cut-side up and baste with remaining maple mixture.
Return to the oven and roast for an additional 10 to 15 minutes.
Remove from the oven and allow to cool slightly before serving.
Serve warm, drizzled with extra maple syrup if desired.
