Pasta

  • 12 ounces Linguine Long, flat pasta that holds onto sauces well.

Instructions

  • Begin by bringing a large pot of salted water to a boil. Once it reaches a rolling boil, add the linguine and cook according to package instructions, typically about 8 to 10 minutes, until al dente.
  • While the pasta is cooking, prepare the arugula and garlic. Rinse 4 cups of fresh arugula under cold water, then drain it well. Mince 4 cloves of garlic.
  • In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium heat for about a minute.
  • Add the minced garlic to the skillet and sauté for about 30 seconds or until fragrant, being careful not to let it brown.
  • Add the arugula to the skillet and sauté for about 2-3 minutes until it wilts down.
  • When the linguine is cooked, reserve about 1 cup of pasta cooking water, then drain the linguine in a colander.
  • Add the drained linguine to the skillet with the sautéed arugula and garlic. Toss to combine.
  • If the pasta seems dry, add small amounts of reserved pasta water until you reach your desired consistency.
  • Add the grated Parmesan cheese to the pasta mixture, stirring gently to allow it to melt slightly.
  • Season with salt and freshly ground black pepper to taste.
  • Squeeze the juice of half a lemon over the pasta, stirring again to combine all the flavors.
  • Remove from heat and serve immediately, garnishing with additional Parmesan cheese and a sprinkle of black pepper if desired.

Notes

For variations, consider adding grilled chicken, sautéed vegetables, or a splash of cream for a richer dish.
