Instructions

  • In a bowl, combine olive oil, lemon juice, honey, minced garlic, salt, black pepper, smoked paprika, and herbs. Mix thoroughly.
  • Place chicken thighs in a resealable bag or bowl, pour marinade over, seal or cover, and refrigerate for at least 30 minutes (preferably 2-4 hours).
  • Preheat grill to medium-high heat (400°F to 450°F).
  • Remove chicken from marinade, allowing excess to drip off. Discard leftover marinade.
  • Grill chicken thighs for 5-7 minutes on one side until grill marks appear.
  • Flip thighs and grill for another 7-10 minutes until internal temperature reaches 165°F.
  • Remove from grill and let rest for 5 minutes before serving.
  • Slice and serve warm, garnished with fresh herbs or lemon wedges.
