Instructions
Preheat your oven to 375°F (190°C).
Wash and slice the zucchini into ¼-inch rounds.
Toss the sliced zucchini with olive oil, garlic powder, salt, and pepper.
Spread a thin layer of marinara sauce in a 9x13 inch baking dish.
Layer half of the zucchini slices over the marinara sauce.
Sprinkle shredded mozzarella and grated Parmesan cheese over the zucchini layer.
Pour another layer of marinara sauce over the cheese.
Repeat layering with remaining zucchini, mozzarella, and Parmesan, finishing with marinara sauce on top.
Cover the baking dish with aluminum foil and bake for 25-30 minutes.
Remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
Let it sit for 10 minutes before serving. Garnish with fresh basil if desired.
