Instructions

  • Preheat your oven to 375°F (190°C).
  • Wash and slice the zucchini into ¼-inch rounds.
  • Toss the sliced zucchini with olive oil, garlic powder, salt, and pepper.
  • Spread a thin layer of marinara sauce in a 9x13 inch baking dish.
  • Layer half of the zucchini slices over the marinara sauce.
  • Sprinkle shredded mozzarella and grated Parmesan cheese over the zucchini layer.
  • Pour another layer of marinara sauce over the cheese.
  • Repeat layering with remaining zucchini, mozzarella, and Parmesan, finishing with marinara sauce on top.
  • Cover the baking dish with aluminum foil and bake for 25-30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  • Let it sit for 10 minutes before serving. Garnish with fresh basil if desired.
