Instructions

  • 1. Start by preparing all your vegetables. Chop the carrots, potatoes, celery, onion, garlic, green beans, and zucchini into even-sized pieces to ensure uniform cooking.
  • 2. In a large pot, heat a tablespoon of olive oil over medium heat. Once the oil is shimmering, add the diced onions and sauté for about 3-4 minutes, or until they become translucent and fragrant.
  • 3. Add the minced garlic to the pot and cook for an additional 1-2 minutes, stirring constantly to prevent burning.
  • 4. Stir in the chopped carrots and celery. Cook these vegetables for about 5 minutes, allowing them to soften slightly.
  • 5. Add the diced potatoes to the pot, stirring well to combine all the vegetables.
  • 6. Pour in the vegetable broth, making sure to cover the vegetables completely. Bring the soup to a gentle boil, then reduce the heat to a simmer.
  • 7. Incorporate the diced tomatoes, chopped green beans, and zucchini into the pot. Add the herbs, spices, salt, and pepper, stirring everything together thoroughly.
  • 8. Let the soup simmer uncovered for about 20-25 minutes, or until the vegetables are tender.
  • 9. Check the seasoning and adjust with more salt and pepper if needed.
  • 10. Once the soup reaches your desired consistency and the vegetables are tender, remove the pot from heat. Allow it to cool slightly before serving.
