Instructions

  • Heat olive oil in a large pot over medium heat until shimmering.

  • Incorporate ground turkey, breaking it apart as it cooks for 6-8 minutes until browned.
  • Add diced bell pepper and sauté for another 5 minutes.
  • Sprinkle in chili powder and cumin, stirring to toast the spices.
  • Pour in tomato sauce and diced tomatoes, stirring to combine.
  • Add chicken broth and stir to combine all ingredients.
  • Incorporate drained kidney beans and black beans.
  • Season with salt and pepper to taste.
  • Bring to a gentle boil, then reduce heat to low and cover. Let simmer for at least 30 minutes.
  • Adjust seasoning if necessary and serve hot.
