Instructions
In a mixing bowl, combine 1 cup of warm water and 2 ¼ teaspoons of active dry yeast. Let it sit for about 5 minutes until frothy.
Add 2 ½ cups of all-purpose flour, 2 tablespoons of olive oil, and 1 teaspoon of salt to the yeast mixture. Stir until a shaggy dough forms.
Transfer the dough onto a lightly floured surface. Knead for about 5-7 minutes until smooth and elastic.
Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Preheat your oven to 475°F (245°C).
Once risen, punch down the dough and divide it into two portions for two medium pizzas.
Roll out the dough on a floured surface to your desired thickness and transfer to a baking sheet.
Spread 1 cup of tomato sauce evenly over the dough, leaving a small border for the crust.
Sprinkle 2 cups of shredded mozzarella cheese over the sauce.
Add your choice of toppings, being careful not to overload.
Bake in the preheated oven for 12-15 minutes or until the crust is golden brown and the cheese is bubbling.
Remove from the oven, let cool for a few minutes, slice, and serve hot.
