Instructions
Heat olive oil in a large pot over medium heat until shimmering.
Add the chopped onion and sauté for about 5 minutes until translucent and slightly golden.
Incorporate minced garlic and sauté for another minute, being careful not to burn it.
Pour in the vegetable broth and bring to a gentle boil.
Add the peas and stir well to combine.
Reduce heat to low and let the soup simmer for about 10 minutes.
Remove from heat and use an immersion blender to puree the soup until smooth.
Return the soup to low heat, season with salt and pepper to taste, and stir well.
Garnish with fresh herbs before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently on the stove.
