Instructions

  • Heat olive oil in a large pot over medium heat until shimmering.
  • Add the chopped onion and sauté for about 5 minutes until translucent and slightly golden.
  • Incorporate minced garlic and sauté for another minute, being careful not to burn it.
  • Pour in the vegetable broth and bring to a gentle boil.
  • Add the peas and stir well to combine.
  • Reduce heat to low and let the soup simmer for about 10 minutes.
  • Remove from heat and use an immersion blender to puree the soup until smooth.
  • Return the soup to low heat, season with salt and pepper to taste, and stir well.
  • Garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently on the stove.
