Instructions
Rinse the tomatoes under cool water. Blanch in boiling water for 1 minute, then transfer to ice water to peel.
Peel the tomatoes, remove the core, and chop into small chunks.
In a saucepan, heat olive oil over medium heat. Sauté minced garlic until fragrant and lightly golden.
Add chopped tomatoes to the pan, stirring to combine with garlic.
Season with salt and pepper. Bring to a simmer and cook for 30-45 minutes, stirring occasionally.
Add crushed red pepper flakes if desired. Stir in torn basil leaves before serving.
Adjust seasoning to taste and serve over pasta, as a pizza base, or as a dipping sauce.
Notes
Store leftovers in an airtight container for up to a week or freeze for up to three months.
