For sautéing.
Instructions
Prepare your ingredients: chop the cabbage, dice the carrots and celery, and finely chop the onion and garlic.
In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until translucent.
Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
Incorporate the diced carrots and celery, cooking for about 5 minutes until softened.
Add the chopped cabbage and stir, allowing it to wilt slightly for about 4-5 minutes.
Pour in the vegetable broth and add the can of diced tomatoes. Bring to a gentle boil, then reduce heat and simmer.
Add the bay leaves and Italian seasoning, stirring to combine.
Cover and let simmer for 30 minutes, stirring occasionally.
Taste and season with salt and pepper as desired. Remove bay leaves before serving.
Serve hot, garnished with fresh herbs if desired.
Notes
This soup can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
