Ingredients

Vegetables

  • 1 medium head Cabbage Chopped into bite-sized pieces.
  • 2 large Carrots Diced.
  • 1 large Onion Chopped.
  • 2 stalks Celery Diced.
  • 3 cloves Garlic Minced.

Broth

  • 6 cups Vegetable Broth Low-sodium.
  • 1 14-ounce can Diced Tomatoes Undrained.

Seasonings

  • 2 leaves Bay Leaves
  • 1 tablespoon Italian Seasoning

To Taste

  • Salt
  • Pepper
  • 2 tablespoons Olive Oil For sautéing.

Instructions

  • Prepare your ingredients: chop the cabbage, dice the carrots and celery, and finely chop the onion and garlic.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until translucent.
  • Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  • Incorporate the diced carrots and celery, cooking for about 5 minutes until softened.
  • Add the chopped cabbage and stir, allowing it to wilt slightly for about 4-5 minutes.
  • Pour in the vegetable broth and add the can of diced tomatoes. Bring to a gentle boil, then reduce heat and simmer.
  • Add the bay leaves and Italian seasoning, stirring to combine.
  • Cover and let simmer for 30 minutes, stirring occasionally.
  • Taste and season with salt and pepper as desired. Remove bay leaves before serving.
  • Serve hot, garnished with fresh herbs if desired.

Notes

This soup can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
