Instructions

  • Mash the ripe bananas in a large mixing bowl until mostly smooth with a few small lumps remaining.
  • Add the sugar, milk, and egg to the mashed bananas and whisk until well combined.
  • In a separate bowl, combine the flour, baking powder, and salt. Whisk together.
  • Gradually add the dry ingredients to the banana mixture, stirring gently. Do not overmix.
  • Let the batter sit for about 5 minutes to activate the baking powder.
  • Heat a non-stick skillet over medium heat and melt a small amount of butter.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form, about 2-3 minutes.
  • Flip the pancakes and cook for an additional 1-2 minutes until golden brown.
  • Remove the pancakes and keep warm while repeating with the remaining batter.
  • Serve warm with toppings of your choice such as maple syrup or fresh fruit.
