Instructions
Mash the ripe bananas in a large mixing bowl until mostly smooth with a few small lumps remaining.
Add the sugar, milk, and egg to the mashed bananas and whisk until well combined.
In a separate bowl, combine the flour, baking powder, and salt. Whisk together.
Gradually add the dry ingredients to the banana mixture, stirring gently. Do not overmix.
Let the batter sit for about 5 minutes to activate the baking powder.
Heat a non-stick skillet over medium heat and melt a small amount of butter.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form, about 2-3 minutes.
Flip the pancakes and cook for an additional 1-2 minutes until golden brown.
Remove the pancakes and keep warm while repeating with the remaining batter.
Serve warm with toppings of your choice such as maple syrup or fresh fruit.
