Instructions
Heat a large pot over medium heat and add the ground beef. Brown for 5-7 minutes, breaking it up until no longer pink. Drain excess fat if necessary.
Add the chopped onion and sauté for about 3 minutes until translucent. Stir in the minced garlic for 30 seconds until fragrant.
Add the diced carrots and potatoes, sauté for another 5 minutes.
Stir in the chopped green beans and the cooked ground beef.
Pour in the beef broth and stir in the tomato paste. Bring to a gentle boil, then reduce heat and let simmer uncovered for 25-30 minutes.
Check the vegetables for tenderness. Adjust seasoning with salt, pepper, or herbs as needed.
Remove from heat and let sit for a few minutes. Serve hot, garnished with parsley.

This soup stores well in the fridge for up to 3 days and can be frozen for up to 3 months.
