  • 1 lb Ground Beef Lean ground beef is recommended.
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 1 large Potato, peeled and cubed Choose a waxy variety for a firmer texture.
  • 1 cup Green Beans, chopped
  • 4 cups Beef Broth Low-sodium broth is preferred.
  • 2 tbsp Tomato Paste
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.
  • 1 tsp Italian Seasoning Or your choice of herbs.
  • 1 handful Fresh Parsley, chopped For garnish.

Instructions

  • Heat a large pot over medium heat and add the ground beef. Brown for 5-7 minutes, breaking it up until no longer pink. Drain excess fat if necessary.
  • Add the chopped onion and sauté for about 3 minutes until translucent. Stir in the minced garlic for 30 seconds until fragrant.
  • Add the diced carrots and potatoes, sauté for another 5 minutes.
  • Stir in the chopped green beans and the cooked ground beef.
  • Pour in the beef broth and stir in the tomato paste. Bring to a gentle boil, then reduce heat and let simmer uncovered for 25-30 minutes.
  • Check the vegetables for tenderness. Adjust seasoning with salt, pepper, or herbs as needed.
  • Remove from heat and let sit for a few minutes. Serve hot, garnished with parsley.

Notes

This soup stores well in the fridge for up to 3 days and can be frozen for up to 3 months.
