Instructions
1. Grate the courgettes and squeeze out excess moisture.
2. In a mixing bowl, combine sifted flour and salt.
3. Mix grated courgettes with harissa paste and olive oil.
4. Pour the courgette mixture into the flour mixture and add warm water gradually.
5. Knead the dough for 5-7 minutes until smooth and elastic.
6. Let the dough rest for 30 minutes covered with a damp cloth.
7. Divide the dough and roll out each portion into a circle or oval shape.
8. Cook each flatbread in a hot skillet for 2-3 minutes on each side.
9. Keep cooked flatbreads warm in a towel and serve.
Notes
Store leftovers in an airtight container for up to three days. Reheat before serving.
