Instructions

  • 1. Grate the courgettes and squeeze out excess moisture.
  • 2. In a mixing bowl, combine sifted flour and salt.
  • 3. Mix grated courgettes with harissa paste and olive oil.
  • 4. Pour the courgette mixture into the flour mixture and add warm water gradually.
  • 5. Knead the dough for 5-7 minutes until smooth and elastic.
  • 6. Let the dough rest for 30 minutes covered with a damp cloth.
  • 7. Divide the dough and roll out each portion into a circle or oval shape.
  • 8. Cook each flatbread in a hot skillet for 2-3 minutes on each side.
  • 9. Keep cooked flatbreads warm in a towel and serve.

Notes
