  • 2 medium Aubergine (Eggplant) Roughly 500-600 grams total.
  • 3 tablespoons Harissa Paste For flavor infusion.
  • 3 medium Fresh Tomatoes Chopped into bite-sized pieces.
  • 150 grams Feta Cheese Crumble over the dish before serving.
  • 3 tablespoons Olive Oil For roasting the vegetables.
  • 2 cloves Garlic Minced for flavor.
  • 1 teaspoon Salt To taste.
  • Black Pepper Freshly cracked, to taste.
  • Fresh Herbs (Optional) Such as parsley or cilantro, for garnish.

Instructions

  • Preheat your oven to 200°C (400°F).
  • Wash and dry the aubergines, cut them in half lengthwise, and score the flesh in a crisscross pattern.
  • Place the halved aubergines on a baking sheet, drizzle with 2 tablespoons of olive oil, and sprinkle with salt and pepper.
  • Roast the aubergines for about 25-30 minutes until golden brown and fork-tender.
  • Combine the harissa paste, minced garlic, and remaining tablespoon of olive oil in a bowl.
  • After 25 minutes, remove the aubergines and spoon the harissa mixture over them, then scatter the chopped tomatoes on top.
  • Return to the oven and roast for an additional 10-15 minutes.
  • Crumble the feta cheese over the top and return to the oven for another 5 minutes.
  • Garnish with fresh herbs if desired and serve warm.

Notes

This dish can be served as a main or side and pairs well with grains like couscous or quinoa.
