Instructions
Preheat your oven to 200°C (400°F).
Wash and dry the aubergines, cut them in half lengthwise, and score the flesh in a crisscross pattern.
Place the halved aubergines on a baking sheet, drizzle with 2 tablespoons of olive oil, and sprinkle with salt and pepper.
Roast the aubergines for about 25-30 minutes until golden brown and fork-tender.
Combine the harissa paste, minced garlic, and remaining tablespoon of olive oil in a bowl.
After 25 minutes, remove the aubergines and spoon the harissa mixture over them, then scatter the chopped tomatoes on top.
Return to the oven and roast for an additional 10-15 minutes.
Crumble the feta cheese over the top and return to the oven for another 5 minutes.
Garnish with fresh herbs if desired and serve warm.

This dish can be served as a main or side and pairs well with grains like couscous or quinoa.
