Simple Grilled Chicken Burrito Bowl

Ingredients

  • 2 pieces Chicken Breast Boneless, skinless chicken breasts, approximately 1 pound total.
  • 2 tablespoons Olive Oil Extra virgin olive oil for marinade.
  • 1 lime Lime Juice Freshly squeezed juice.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Cumin
  • to taste Salt and Pepper For seasoning.
  • 1 cup Rice Long-grain white rice, cooked according to package instructions.
  • 1 can Black Beans Rinsed and drained.
  • 1 cup Cherry Tomatoes Halved.
  • 1 cup Corn Fresh or frozen.
  • 1 piece Avocado Ripe, sliced or diced.
  • 1 cup Cheddar Cheese Shredded.
  • 1 handful Fresh Cilantro Chopped.

Instructions

  • In a mixing bowl, combine olive oil, lime juice, garlic powder, chili powder, cumin, salt, and pepper. Whisk until blended.
  • Place chicken breasts in a resealable bag or dish, pour marinade over, seal, and refrigerate for at least 30 minutes.
  • Cook rice according to package instructions. Fluff with a fork and set aside.
  • Preheat grill or grill pan over medium-high heat.
  • Remove chicken from marinade, discard marinade, and grill chicken for 6-7 minutes per side until cooked through.
  • Let chicken rest for 5 minutes, then slice into bite-sized pieces.
  • Assemble bowls with a base of rice, topped with chicken, black beans, cherry tomatoes, corn, avocado, and cheddar cheese.
  • Garnish with fresh cilantro and serve immediately with lime wedges.

Notes

Customize with jalapeƱos for spice or grilled vegetables for added flavor.
