Instructions
Preheat your oven to 400°F (200°C).
Prepare a baking dish by lightly greasing it with a tablespoon of olive oil.
In a bowl, combine the halved cherry tomatoes, sliced red onion, and sliced bell pepper. Drizzle with a tablespoon of olive oil, and season with salt, pepper, and half of the fresh oregano. Toss everything to coat well.
Spread the vegetable mixture evenly in the prepared baking dish.
Place the fish fillets on top of the vegetable bed.
In a small bowl, mix the remaining olive oil, minced garlic, lemon juice, and the rest of the oregano. Whisk until combined.
Drizzle the marinade generously over the fish fillets.
Season the fish with additional salt and pepper.
Cover the baking dish with aluminum foil.
Bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 10 minutes.
Once finished, remove the baking dish from the oven. Sprinkle freshly chopped parsley over the top.
Serve immediately, ensuring each serving includes a generous portion of the roasted vegetables.
