Ingredients

Fish Fillets

  • 24 ounces Firm White Fish (e.g., cod or tilapia) Each fillet should weigh around 6 ounces.

Olive Oil

  • 3 tablespoons Extra Virgin Olive Oil Adds flavor and keeps the fish moist.

Lemon Juice

  • 1 large Lemon Freshly squeezed juice is essential.

Garlic

Cherry Tomatoes

Red Onion

  • 1 medium Sliced Red Onion Adds mild sweetness.

Bell Peppers

Fresh Oregano

  • 2 teaspoons Chopped Fresh Oregano Traditional herb in Greek cooking.

Fresh Parsley

  • 2 tablespoons Chopped Fresh Parsley For garnish.

Salt and Pepper

Instructions

  • Preheat your oven to 400°F (200°C).
  • Prepare a baking dish by lightly greasing it with a tablespoon of olive oil.
  • In a bowl, combine the halved cherry tomatoes, sliced red onion, and sliced bell pepper. Drizzle with a tablespoon of olive oil, and season with salt, pepper, and half of the fresh oregano. Toss everything to coat well.
  • Spread the vegetable mixture evenly in the prepared baking dish.
  • Place the fish fillets on top of the vegetable bed.
  • In a small bowl, mix the remaining olive oil, minced garlic, lemon juice, and the rest of the oregano. Whisk until combined.
  • Drizzle the marinade generously over the fish fillets.
  • Season the fish with additional salt and pepper.
  • Cover the baking dish with aluminum foil.
  • Bake in the preheated oven for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes.
  • Once finished, remove the baking dish from the oven. Sprinkle freshly chopped parsley over the top.
  • Serve immediately, ensuring each serving includes a generous portion of the roasted vegetables.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently in the oven.
