Instructions
Heat 4 cups of chicken or vegetable stock in a saucepan over low heat and keep warm.
In a large saucepan, heat 2 tablespoons of olive oil over medium heat. Add 1 finely chopped onion and sauté for about 5 minutes until translucent.
Add 2 minced garlic cloves and sauté for an additional 1-2 minutes.
Add 1 cup of arborio rice and stir for about 2 minutes.
Begin adding the warm stock, one ladle at a time, stirring frequently for about 18-20 minutes.
After 15 minutes, add 300 grams of king prawns and stir gently.
Continue to add stock and stir until the rice is al dente and creamy.
Remove from heat and stir in ½ cup of parmesan cheese and 2 tablespoons of butter.
Season with salt and pepper to taste, and serve immediately garnished with parsley.

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
