Ingredients

Beans

  • 1 can (15 oz) Black Beans Drained and rinsed.
  • 1 can (15 oz) Black-Eyed Peas Drained and rinsed.

Vegetables

  • 1 cup Cherry Tomatoes Halved.
  • 1 small Red Onion Finely chopped.
  • 1 medium Bell Pepper Diced.
  • 1/4 cup Fresh Cilantro Chopped.

Dressing

  • 1/4 cup Lime Juice Freshly squeezed.
  • 2 tablespoons Extra Virgin Olive Oil

Seasoning

  • to taste Salt
  • to taste Pepper
  • 1 small Jalapeño Finely chopped (optional).

Instructions

  • Gather all your ingredients, ensuring everything is prepped and ready.
  • In a large mixing bowl, combine the drained black beans and black-eyed peas. Stir gently.
  • Add the halved cherry tomatoes to the bowl and distribute evenly.
  • Finely chop the red onion and add it to the bowl.
  • Dice the bell pepper and add it to the mix.
  • Chop the fresh cilantro and sprinkle it over the mixture.
  • If using, add the finely chopped jalapeño.
  • In a small bowl, whisk together the lime juice and olive oil.
  • Pour the lime juice and olive oil mixture over the bean and vegetable mixture and fold gently.
  • Season with salt and pepper to taste.
  • Cover and chill in the refrigerator for at least 30 minutes.
  • Stir gently before serving and adjust seasoning if necessary.
  • Serve with tortilla chips or as a topping for tacos.

Notes

This dish can be made ahead of time for enhanced flavors. Store leftovers in an airtight container for up to three days.
