Instructions
Gather all your ingredients, ensuring everything is prepped and ready.
In a large mixing bowl, combine the drained black beans and black-eyed peas. Stir gently.
Add the halved cherry tomatoes to the bowl and distribute evenly.
Finely chop the red onion and add it to the bowl.
Dice the bell pepper and add it to the mix.
Chop the fresh cilantro and sprinkle it over the mixture.
If using, add the finely chopped jalapeño.
In a small bowl, whisk together the lime juice and olive oil.
Pour the lime juice and olive oil mixture over the bean and vegetable mixture and fold gently.
Season with salt and pepper to taste.
Cover and chill in the refrigerator for at least 30 minutes.
Stir gently before serving and adjust seasoning if necessary.
Serve with tortilla chips or as a topping for tacos.
Notes
This dish can be made ahead of time for enhanced flavors. Store leftovers in an airtight container for up to three days.
