  • 2 medium Courgettes Grated and drained to remove excess moisture.
  • 200 grams Halloumi Cheese Cut into small cubes.
  • 1 medium Potato Peeled and grated.
  • 1 small Onion Finely chopped.
  • 1 large Egg Beaten lightly.
  • 1 handful Fresh Herbs Chopped parsley or dill.
  • to taste Salt
  • to taste Black Pepper Freshly ground.
  • 3-4 tablespoons Olive Oil For frying.

Instructions

  • Grate the courgettes and potato. Squeeze out excess moisture from the courgettes using a clean kitchen towel.
  • In a large bowl, combine the drained courgettes and grated potato. Add the finely chopped onion and mix thoroughly.
  • Add the diced halloumi to the mixture and ensure it is evenly distributed.
  • In a separate bowl, beat the egg and season with salt and pepper. Pour this into the vegetable and cheese mixture, mixing until well combined.
  • Add the chopped fresh herbs and stir well to incorporate.
  • Heat a non-stick skillet over medium heat and add olive oil.
  • Using a tablespoon or ice cream scoop, portion out the mixture into the pan, flattening each mound gently to form patties.
  • Cook the rostis for about 4-5 minutes on one side until golden brown, then flip and cook for an additional 4-5 minutes.
  • Transfer cooked rostis to a plate lined with paper towels to absorb excess oil.
  • Allow to cool for a minute before serving.

Notes

Serve with a yogurt dip or a fresh salad for a complete meal.
