  • 1 cup Long-grain white rice Rinsed and drained to remove excess starch.
  • 2 tablespoons Lime juice Juice of one medium lime.
  • 2 cups Vegetable broth or water For cooking the rice.
  • 1 teaspoon Salt To taste.
  • 1 tablespoon Olive oil or butter For sautéing the rice.
  • 1 handful Fresh coriander leaves Chopped finely.

Instructions

  • Rinse the long-grain white rice under cold water using a fine-mesh strainer.
  • In a medium saucepan, heat olive oil or butter over medium heat until shimmering.
  • Add the rinsed rice to the saucepan and toast for 2-3 minutes, stirring frequently.
  • Pour in the vegetable broth or water, scraping any rice stuck to the bottom.
  • Stir in the salt and bring the mixture to a rolling boil.
  • Reduce heat to low, cover, and simmer for 18-20 minutes without lifting the lid.
  • Remove from heat and let sit covered for 5-10 minutes.
  • Fluff the rice gently with a fork.
  • Add lime juice and fold in the chopped coriander leaves.
  • Serve immediately or keep warm until ready to serve.

Notes

This rice pairs beautifully with grilled chicken, fish, or vegetables. Store leftovers in an airtight container for up to three days.
