Instructions

  • Start by rinsing 1 cup of jasmine rice under cold water in a fine-mesh strainer until the water runs clear.
  • In a medium saucepan, combine the rinsed jasmine rice, 1 can of coconut milk, and 1 cup of water. Stir gently to mix the ingredients together.
  • Add 1/2 teaspoon of salt to the mixture and stir again to incorporate the salt evenly.
  • Place the saucepan over medium heat and bring the liquid to a gentle boil.
  • Once it reaches a boil, reduce the heat to low and cover the saucepan with a tight-fitting lid.
  • Allow the rice to simmer on low heat for about 15-20 minutes.
  • Once the cooking time is up, remove the saucepan from heat and let it sit, covered, for an additional 10 minutes.
  • After the resting period, carefully remove the lid and fluff the rice with a fork.
  • If using, gently fold in lime zest or cilantro for an extra burst of flavor.
