Instructions
1. Rinse the rice under cold water until the water runs clear. Drain well.
2. In a medium saucepan, combine the rinsed rice, water, and salt. Stir gently.
3. Bring to a boil over medium-high heat, then reduce to low and cover.
4. Simmer on low heat for 15-18 minutes without lifting the lid.
5. Remove from heat and let sit covered for 5 minutes.
6. Fluff the rice with a fork.
7. Mix lime juice and olive oil in a small bowl, then pour over the rice.
8. Fold in the chopped cilantro gently.
9. Taste and adjust seasoning if necessary.
10. Serve warm as a side dish or base for your favorite protein.
