  • 1/4 cup Chipotle Sauce Adjust based on heat preference.
  • 1/4 cup BBQ Sauce Choose your favorite brand.
  • 2 cups Shredded Cheese Cheddar or Monterey Jack recommended.
  • 4 large Flour Tortillas Soft and pliable for folding.
  • 1 tablespoon Olive Oil For cooking the quesadillas.
  • 1 handful Fresh Cilantro Optional, for garnish.
  • 1 cup Sour Cream Optional, for serving.

Instructions

  • Trim excess fat from the chicken breast and cut into bite-sized pieces. Season with salt and pepper.
  • Heat a large skillet over medium heat and add olive oil. Once hot, add chicken pieces and sauté for 5-7 minutes until cooked through.
  • Reduce heat to low, add chipotle sauce and BBQ sauce, stir to coat chicken, and simmer for 2-3 minutes.
  • Lay out tortillas on a clean surface, ensuring they are warm and pliable.
  • Divide chicken mixture among tortillas, sprinkle cheese over the filling, and fold tortillas in half.
  • Wipe skillet clean, return to medium heat, add more olive oil, and cook folded quesadillas for 3-4 minutes on each side until golden brown.
  • Check for doneness, ensuring cheese is melted and tortillas are crispy. Slice into wedges and serve warm.
  • Garnish with fresh cilantro and serve with sour cream if desired.
