Instructions
Trim excess fat from the chicken breast and cut into bite-sized pieces. Season with salt and pepper.
Heat a large skillet over medium heat and add olive oil. Once hot, add chicken pieces and sauté for 5-7 minutes until cooked through.
Reduce heat to low, add chipotle sauce and BBQ sauce, stir to coat chicken, and simmer for 2-3 minutes.
Lay out tortillas on a clean surface, ensuring they are warm and pliable.
Divide chicken mixture among tortillas, sprinkle cheese over the filling, and fold tortillas in half.
Wipe skillet clean, return to medium heat, add more olive oil, and cook folded quesadillas for 3-4 minutes on each side until golden brown.
Check for doneness, ensuring cheese is melted and tortillas are crispy. Slice into wedges and serve warm.
Garnish with fresh cilantro and serve with sour cream if desired.
