Instructions
Dice the chicken breast into small, uniform cubes.
In a large pot, heat a tablespoon of sesame oil over medium heat.
Add the minced garlic and grated ginger to the pot and sauté for 1-2 minutes until fragrant.
Add the diced chicken to the pot and cook for 5-7 minutes until lightly browned.
Pour in the chicken broth and bring to a gentle boil.
Reduce heat to a simmer and add the sweet corn, cooking for about 5 minutes.
Mix the cornstarch with cold water to create a slurry, then pour into the soup while stirring.
Simmer for an additional 3-5 minutes until thickened to desired consistency.
Season with salt and pepper to taste, then stir in chopped green onions.
Serve hot in bowls, garnished with extra green onions if desired.
