Ingredients

Chicken Breast

  • 1 pound boneless, skinless chicken breast Marinate in fajita seasoning for flavor.

Bell Peppers

  • 1 each red bell pepper Sliced into strips.
  • 1 each green bell pepper Sliced into strips.

Red Onion

  • 0.5 medium red onion Thinly sliced.

Romaine Lettuce

  • 4 cups chopped romaine lettuce Base of the salad.

Avocado

  • 1 each ripe avocado Diced.

Cherry Tomatoes

  • 1 cup halved cherry tomatoes Adds sweetness and color.

Feta Cheese

  • 0.5 cup crumbled feta cheese For a tangy finish.

Olive Oil

  • 2 tablespoons extra virgin olive oil For grilling.

Fajita Seasoning

  • 2 tablespoons fajita seasoning mix For marinating chicken.

Lime Juice

  • 1 tablespoon freshly squeezed lime juice Enhances brightness.

Instructions

  • Marinate the chicken by combining it with fajita seasoning and olive oil in a bowl. Let it marinate for at least 30 minutes.
  • Prepare the vegetables by slicing the bell peppers and red onion.
  • Heat a grill or grill pan over medium-high heat. Grill the marinated chicken for 6-7 minutes on each side until cooked through.
  • Add the sliced bell peppers and onions to the grill during the last couple of minutes of cooking.
  • Remove the chicken and vegetables from the grill and let them rest for a few minutes.
  • In a large serving bowl, add the chopped romaine lettuce, diced avocado, and halved cherry tomatoes.
  • Slice the grilled chicken and arrange it on top of the salad along with the grilled vegetables. Sprinkle with feta cheese and drizzle with lime juice.
  • Toss the salad gently to combine all ingredients and serve immediately.
