Instructions
Gather all your ingredients and prepare your workspace.
Slice the chicken breasts into thin strips and place in a mixing bowl.
Add olive oil, fajita seasoning, salt, and pepper to the chicken. Toss to coat and marinate for at least 10 minutes.
Slice the bell peppers and onion into thin strips and set aside.
Heat a skillet over medium-high heat and add the marinated chicken. Cook for 5-7 minutes until golden brown and cooked through.
Remove chicken from the skillet and add sliced onions and bell peppers. Sauté for 4-5 minutes until tender.
Return the chicken to the skillet and stir to combine for an additional 2 minutes.
Cook rice or quinoa according to package instructions.
Assemble bowls with rice or quinoa at the bottom, topped with chicken and vegetable mixture, lime juice, and cilantro.
Serve immediately while hot.
