Ingredients

Protein

  • 1 pound Boneless, Skinless Chicken Breasts Sliced into strips for quick cooking.

Vegetables

  • 1 cup Bell Peppers Mix of red, green, and yellow, sliced.
  • 1 medium Onion Sliced.

Cooking Ingredients

  • 2 tablespoons Olive Oil For sautéing.
  • 2 tablespoons Fajita Seasoning Store-bought or homemade.
  • to taste Salt
  • to taste Pepper

Base

  • 2 cups Cooked Rice or Quinoa For serving.

Garnishes

  • 2 Fresh Lime Wedges For squeezing over the bowls.
  • 1/4 cup Fresh Cilantro Chopped, for garnish.

Instructions

  • Gather all your ingredients and prepare your workspace.
  • Slice the chicken breasts into thin strips and place in a mixing bowl.
  • Add olive oil, fajita seasoning, salt, and pepper to the chicken. Toss to coat and marinate for at least 10 minutes.
  • Slice the bell peppers and onion into thin strips and set aside.
  • Heat a skillet over medium-high heat and add the marinated chicken. Cook for 5-7 minutes until golden brown and cooked through.
  • Remove chicken from the skillet and add sliced onions and bell peppers. Sauté for 4-5 minutes until tender.
  • Return the chicken to the skillet and stir to combine for an additional 2 minutes.
  • Cook rice or quinoa according to package instructions.
  • Assemble bowls with rice or quinoa at the bottom, topped with chicken and vegetable mixture, lime juice, and cilantro.
  • Serve immediately while hot.
